As the name suggests, gas cooktops produce heat for cooking using gas. Your gas source could be piped into your home (offered in certain high-rise buildings) from a centralised source, or from gas cylinders. If you’re using gas cylinders, you’ll have to replace your empty cylinders with a new one when you run out of gas — this could be inconvenient when you run out of gas and don’t have a replacement ready!

The alternative cooktops like induction run on electricity instead of gas, so you’ll never have to worry about running out of gas at an inconvenient time. Induction cooktops use electromagnetic radiation to create heat that is then transferred directly to the cookware. The direct heat transfer means the cooking surface and the kitchen will always remain cool even while you cook.
SAFETY
A major advantage of induction cooktops is safety. As they run on electricity, there is no worry of open flames that may be a concern if you’re using a gas cooktop. Open flames can be a fire hazard when left unattended, especially a concern for families with young children. With some modern cooktops, there are also safety indicators and child-lock features built in to ensure safety.

With gas cooktops, the stove has to first heat up the burner, which then heats up your cookware, and finally heats up your food. With induction cooktops, heat moves directly to your cookware — one less step in the heating process. This efficiency leads to saved time and lower energy consumption.

COOKWARE COMPATIBILITY
While the benefits of induction cooking are clear, cookware compatibility is a concern for some people as not all cookwares work with induction cooktops. With induction heating, electricity is used to transfer the heat, so the type of cookware used must be conducive to this heating method. Cookware made of aluminium and copper don’t have the magnetic properties required, and are incompatible with induction cooking.
